...on Highway 441, near Micanopy, Florida. I believe it serves Cuban food.

Remember when food trucks were called roach-mobiles? Now days, they serve gourmet food. I work part time for a non-profit organization and they have a food truck come on site once a month. It's always something different so I get to try them out. The food truck owners give a portion of their sales back to the organization so it's a good incentive for staff to give the food a try. They have all been pretty decent lunch food but, I don't think I'd call one of them "gourmet".

Pretty colorful. There are several similar trucks in Mount Vernon where there is a large Hispanic population and they serve Mexican food

We've been trying to get up the courage to try one of Eugenes many food carts ... I guess it will have to be next summer as we are on our way this week to sunnier climes!
